In a situation where haze levels are being adjusted on sequence faders, is it possible to protect them from being recorded in the Timecode?

currently it is not possible to protect a fader against recording.
You would have to delete the track afterwards.Johannes

Or when you have already the track of the unwanted sequence in your timecode show, you can disable recording and playback for that track. Please see the attached screenshot. Just do a right-click into the corresponding cells for Play and Rec of that track:
